Ingredients:
- 2 eggplants, sliced
- 2 zucchinis, sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can of diced tomatoes
- 1 can of lentils, drained and rinsed
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 tbsp olive oil
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.
- Add diced tomatoes, lentils, oregano, basil, cinnamon, salt, and pepper. Simmer for 10 minutes.
- In a separate pan, lightly fry the eggplant and zucchini slices until slightly browned.
- In a baking dish, layer the eggplant and zucchini slices. Top with the lentil mixture.
- Repeat the layers and finish with a layer of eggplant and zucchini slices on top.
- Sprinkle Parmesan cheese and breadcrumbs over the top layer.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.
- Let it cool slightly before serving.
