Vegetarian Moussaka is a delicious and hearty dish that replaces the traditional meat with lentils and layers of vegetables. This Greek-inspired casserole is full of flavor and perfect for a comforting meal.

Vegetarian Moussaka

Ingredients:

  • 2 eggplants, sliced
  • 2 zucchinis, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can of diced tomatoes
  • 1 can of lentils, drained and rinsed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tbsp olive oil

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.
  3. Add diced tomatoes, lentils, oregano, basil, cinnamon, salt, and pepper. Simmer for 10 minutes.
  4. In a separate pan, lightly fry the eggplant and zucchini slices until slightly browned.
  5. In a baking dish, layer the eggplant and zucchini slices. Top with the lentil mixture.
  6. Repeat the layers and finish with a layer of eggplant and zucchini slices on top.
  7. Sprinkle Parmesan cheese and breadcrumbs over the top layer.
  8. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.
  9. Let it cool slightly before serving.
