Vietnamese Beef Pho Noodle Soup

Ingredients:

  • 8 cups beef broth
  • 1 onion, sliced
  • 3-inch piece of ginger, sliced
  • 2 cinnamon sticks
  • 3 star anise
  • 1 lb beef sirloin, thinly sliced
  • 8 oz rice noodles
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • Salt and pepper to taste
  • Garnishes: bean sprouts, Thai basil, lime wedges, sliced chili

Directions:

  1. In a large pot, bring the beef broth to a simmer.
  2. Add the onion, ginger, cinnamon, and star anise. Simmer for 30 minutes.
  3. Strain the broth and return it to the pot. Discard the solids.
  4. Add the fish sauce, soy sauce, sugar, salt, and pepper to the broth. Adjust seasoning to taste.
  5. Cook the rice noodles according to package instructions.
  6. Divide the noodles among serving bowls and top with raw beef slices.
  7. Pour the hot broth over the noodles and beef. The hot broth will cook the beef slices.
