Zesty Chicken Salad Sandwich

Ingredients:

• 2 cups cooked chicken, shredded
• 1/2 cup mayonnaise
• 1/4 cup celery, finely chopped
• 1/4 cup red onion, finely chopped
• 1/4 cup dried cranberries
• 1 tablespoon lemon juice
• 1 teaspoon Dijon mustard
• Salt and pepper to taste
• 8 slices whole grain bread
• Lettuce leaves for serving

Directions:

1. In a mixing bowl, combine shredded chicken, mayonnaise, celery, red onion, dried cranberries, lemon juice, Dijon mustard, salt, and pepper.
2. Mix until well combined and adjust seasoning to taste.
3. Toast the whole grain bread slices until lightly golden and crisp.
4. Place lettuce leaves on 4 slices of bread.
5. Divide the chicken salad mixture evenly on top of the lettuce.
6. Cover with the remaining bread slices to make sandwiches.
7. Cut the sandwiches diagonally and serve.
