Zesty Chimichurri Shrimp Skewers

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • Lemon wedges for serving

Directions:

  1. In a bowl, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper to make the chimichurri sauce.
  2. Thread the shrimp onto skewers and brush generously with the chimichurri sauce.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the shrimp skewers for 2-3 minutes per side or until shrimp are pink and opaque.
  5. Serve the shrimp skewers with lemon wedges and extra chimichurri sauce for dipping.
