Zesty Lemon Herb Chicken and Rice

Ingredients:

• 4 boneless, skinless chicken breasts
• 1 cup long-grain white rice
• 2 cups chicken broth
• 1 lemon, zested and juiced
• 2 cloves garlic, minced
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• 1 teaspoon dried parsley
• Salt and pepper to taste
• 2 tablespoons olive oil

Directions:

1. Preheat the oven to 375°F (190°C).
2. Season the chicken breasts with salt, pepper, and half of the lemon zest.
3. In a large oven-safe skillet, heat olive oil over medium-high heat.
4. Sear the chicken breasts for 3-4 minutes per side until golden brown. Remove and set aside.
5. In the same skillet, add garlic and remaining lemon zest. Cook for 1 minute.
6. Add rice, thyme, rosemary, parsley, chicken broth, lemon juice, salt, and pepper. Stir to combine.
7. Place the seared chicken breasts on top of the rice mixture.
8. Cover the skillet with foil or a lid and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the rice is tender.
9. Serve the lemon herb chicken and rice hot, garnished with fresh herbs or additional lemon zest.
