Zesty Salmon Ceviche Tacos

Ingredients:

  • 1 lb fresh salmon fillet, skin removed and diced
  • 1 cup fresh lime juice
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 8 small corn tortillas
  • Salt and pepper to taste

Directions:

  1. In a glass bowl, combine the diced salmon and lime juice. Make sure the salmon is fully covered by the juice. Cover and refrigerate for 20-30 minutes.
  2. After marinating, drain excess lime juice from the salmon.
  3. In a separate bowl, mix the marinated salmon with red onion, jalapeño, cilantro, avocado, salt, and pepper.
  4. Warm the corn tortillas in a skillet until slightly charred and pliable.
  5. Divide the salmon ceviche mixture among the tortillas.
  6. Serve the zesty salmon ceviche tacos immediately and enjoy!
