Ingredients:
- 1 lb fresh salmon fillet, skin removed and diced
- 1 cup fresh lime juice
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and diced
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 8 small corn tortillas
- Salt and pepper to taste
Directions:
- In a glass bowl, combine the diced salmon and lime juice. Make sure the salmon is fully covered by the juice. Cover and refrigerate for 20-30 minutes.
- After marinating, drain excess lime juice from the salmon.
