Zesty Shrimp Avocado Salad

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Directions:

  1. In a bowl, combine shrimp, olive oil, cumin, salt, and pepper. Toss to coat the shrimp evenly.
