Zesty Shrimp Avocado Salad

Ingredients:

• 1 lb large shrimp, peeled and deveined
• 2 avocados, diced
• 1 cup cherry tomatoes, halved
• 1/2 red onion, thinly sliced
• 1/4 cup fresh cilantro, chopped
• 1/4 cup lime juice
• 2 tbsp olive oil
• 1 tsp cumin
• Salt and pepper to taste

Directions:

1. In a bowl, combine shrimp, olive oil, cumin, salt, and pepper. Toss to coat the shrimp evenly.
2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from heat and let cool.
3. In a large salad bowl, combine diced avocados, cherry tomatoes, red onion, and cilantro.
4. Add the cooked shrimp to the salad bowl.
5. Drizzle lime juice over the salad and gently toss to combine all ingredients.
6. Season with additional salt and pepper to taste.
