Ingredients:
- 1 cup rice noodles
- 1 cup cooked jasmine rice
- 1 cup shredded coleslaw mix
- 1 chicken breast, sliced
- 1 fillet of white fish (such as cod or tilapia)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Directions:
- In a bowl, combine soy sauce, sesame oil, honey, ginger, and garlic to make a marinade.
- Marinate chicken slices in half of the sauce mixture for 30 minutes.
- Season the fish fillet with salt and pepper.
- Heat vegetable oil in a pan over medium heat.
- Cook the marinated chicken until browned and cooked through, then set aside.
- In the same pan, cook the fish fillet for 3-4 minutes on each side or until flaky. Set aside.
- Cook rice noodles according to package instructions and drain.
- Divide cooked rice noodles, jasmine rice, and coleslaw into bowls.
- Top with cooked chicken and fish.
- Drizzle the remaining sauce over the bowl and serve hot.
