Asian Fusion Noodles Rice Coleslaw Chicken Fish Bowl

Ingredients:

  • 1 cup rice noodles
  • 1 cup cooked jasmine rice
  • 1 cup shredded coleslaw mix
  • 1 chicken breast, sliced
  • 1 fillet of white fish (such as cod or tilapia)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Directions:

  1. In a bowl, combine soy sauce, sesame oil, honey, ginger, and garlic to make a marinade.
  2. Marinate chicken slices in half of the sauce mixture for 30 minutes.
  3. Season the fish fillet with salt and pepper.
  4. Heat vegetable oil in a pan over medium heat.
  5. Cook the marinated chicken until browned and cooked through, then set aside.
  6. In the same pan, cook the fish fillet for 3-4 minutes on each side or until flaky. Set aside.
  7. Cook rice noodles according to package instructions and drain.
  8. Divide cooked rice noodles, jasmine rice, and coleslaw into bowls.
  9. Top with cooked chicken and fish.
  10. Drizzle the remaining sauce over the bowl and serve hot.
