Bacon and Egg Strata

Serving Size: 4 servings

Ingredients:

  • Some butter (to grease a casserole dish)
  • 2 cups cubed French bread or ciabatta
  • 1 1/4 cups shredded Gruyere cheese
  • 1 finely chopped shallot
  • 5 large eggs
  • 2/3 cup light cream
  • 1 tsp Creole seasoning (or your favourite seasoning blend, or salt and pepper)
  • 3 slices of thick cut bacon, cooked and sliced

Directions:

  1. Preheat the oven to 350F. Butter a 9 x 9 inch baking casserole.
  2. In a large bowl, toss the bread cubes, cheese and shallot.
  3. Arrange this mixture evenly in the casserole dish.
  4. In the same bowl, beat the eggs, cream and seasoning until well blended. Pour this egg mixture over the bread cubes. Sprinkle the bacon on top.
  5. Bake until a knife inserted into the centre of the strata comes out clean, about 25 minutes. Serve hot.
