- 1 lb beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup barley, rinsed
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups mixed vegetables (e.g., green beans, peas, corn)
- 2 bay leaves
Directions:
- In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides, about 5-7 minutes.
- Remove the beef and set aside. In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened.
- Stir in garlic and cook for an additional minute until fragrant.
- Return the beef to the pot and add barley, beef broth, diced tomatoes, thyme, rosemary, salt, pepper, and bay leaves.
- Bring to a boil, then reduce heat to low and cover. Simmer for 1 hour.
- Add mixed vegetables and continue to simmer for another 30 minutes until barley and vegetables are tender.
- Remove bay leaves before serving.
