Ingredients:
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 slices white bread, soaked in milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tbsp apricot jam
- 1 tbsp vinegar
- 1/4 cup raisins
- 1/4 cup slivered almonds
- Salt and pepper to taste
- 2 eggs
- 1 cup milk
- 2 cups cooked yellow rice
- Fresh coriander leaves for garnish
Directions:
- Preheat the oven to 350°F (175°C).
- In a skillet, sauté the onion and garlic until soft.
- Add the ground beef and cook until browned. Drain any excess fat.
- Add the curry powder, turmeric, apricot jam, vinegar, raisins, almonds, salt, and pepper. Mix well.
- Squeeze the excess milk from the soaked bread and add it to the beef mixture. Stir until combined.
- Transfer the mixture to a baking dish and spread it evenly.
- In a bowl, beat the eggs and milk together. Pour the mixture over the beef.
- Bake in the preheated oven for 30-35 minutes or until the egg is set.
- Serve the bobotie hot with yellow rice and garnish with fresh coriander leaves.
