Ingredients:

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 slices white bread, soaked in milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tbsp apricot jam
  • 1 tbsp vinegar
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • Salt and pepper to taste
  • 2 eggs
  • 1 cup milk
  • 2 cups cooked yellow rice
  • Fresh coriander leaves for garnish

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the onion and garlic until soft.
  3. Add the ground beef and cook until browned. Drain any excess fat.
  4. Add the curry powder, turmeric, apricot jam, vinegar, raisins, almonds, salt, and pepper. Mix well.
  5. Squeeze the excess milk from the soaked bread and add it to the beef mixture. Stir until combined.
  6. Transfer the mixture to a baking dish and spread it evenly.
  7. In a bowl, beat the eggs and milk together. Pour the mixture over the beef.
  8. Bake in the preheated oven for 30-35 minutes or until the egg is set.
  9. Serve the bobotie hot with yellow rice and garnish with fresh coriander leaves.
