Cajun Chicken Pasta with Garlic Bread and Chocolate Mousse

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp Cajun seasoning
  • 8 oz penne pasta
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 French baguette, sliced
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/4 cup chopped parsley
  • 4 oz dark chocolate
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Directions:

  1. In a bowl, coat the sliced chicken breasts with Cajun seasoning.
  2. Cook the penne pasta according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until browned, about 5-6 minutes. Remove from skillet and set aside.
  4. In the same skillet, add a little more oil if needed. Saute the bell peppers, onion, and garlic until softened.
  5. Add the chicken back to the skillet. Pour in the heavy cream and chicken broth. Stir in the Parmesan cheese until melted and the sauce has thickened.
  6. Season with salt and pepper to taste. Add the cooked pasta to the skillet and toss to combine.
  7. In a small bowl, mix butter and garlic powder. Spread on sliced French baguette and broil until golden brown.
  8. For the chocolate mousse, melt dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
  9. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Gently fold the melted chocolate into the whipped cream until fully combined.
  11. Divide the Cajun chicken pasta onto plates, garnish with chopped parsley, and serve with garlic bread and a dollop of chocolate mousse on the side.
