Ingredients:
- 2 boneless, skinless chicken breasts, sliced
- 2 tbsp Cajun seasoning
- 8 oz penne pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 French baguette, sliced
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/4 cup chopped parsley
- 4 oz dark chocolate
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Directions:
- In a bowl, coat the sliced chicken breasts with Cajun seasoning.
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until browned, about 5-6 minutes. Remove from skillet and set aside.
- In the same skillet, add a little more oil if needed. Saute the bell peppers, onion, and garlic until softened.
- Add the chicken back to the skillet. Pour in the heavy cream and chicken broth. Stir in the Parmesan cheese until melted and the sauce has thickened.
- Season with salt and pepper to taste. Add the cooked pasta to the skillet and toss to combine.
- In a small bowl, mix butter and garlic powder. Spread on sliced French baguette and broil until golden brown.
- For the chocolate mousse, melt dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
- In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold the melted chocolate into the whipped cream until fully combined.
- Divide the Cajun chicken pasta onto plates, garnish with chopped parsley, and serve with garlic bread and a dollop of chocolate mousse on the side.
