Cast Iron Skillet Cottage Pie

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a cast iron skillet over medium heat.
  3. Add diced onions, carrots, and garlic. Cook until softened.
  4. Add ground beef, season with salt and pepper, and cook until browned.
  5. Stir in tomato paste and Worcestershire sauce.
  6. Pour in beef broth and simmer for 5 minutes.
  7. Stir in frozen peas and cook for another 2 minutes.
  8. Spread the mashed potatoes over the beef mixture in the skillet.
  9. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
  10. Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
