Ingredients:
- 2 lbs beef shank, cut into large chunks
- 1 onion, sliced
- 4 cloves garlic, minced
- 1-inch ginger, sliced
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 2 tbsp brown sugar
- 2 star anise
- 1 cinnamon stick
- 4 cups beef broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Directions:
- In a large pot, heat vegetable oil over medium-high heat.
- Season beef shank with salt and pepper, then sear until browned on all sides. Remove and set aside.
- Add onion, garlic, and ginger to the pot. Cook until fragrant.
- Stir in soy sauce, rice vinegar, brown sugar, star anise, and cinnamon stick.
- Return the beef shank to the pot and pour in the beef broth. Bring to a simmer.
- Cover and let it braise on low heat for 2-3 hours until the beef is tender.
- Once done, remove the beef shank and let the sauce reduce until thickened.
- Serve the beef shank with the reduced sauce and steamed rice.
