Ingredients:

  • 2 cups cooked jasmine rice, chilled
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 2 green onions, thinly sliced
  • 1 tablespoon soy sauce
  • Zest of 1 lemon
  • Zest of 1 lime
  • Salt and pepper to taste

Directions:

  1. In a large pan or wok, heat vegetable oil over medium heat.
  2. Add diced bell pepper and frozen peas, sauté for 2-3 minutes until slightly softened.
  3. Push the vegetables to the side of the pan and add minced garlic, cook for 30 seconds until fragrant.
  4. Push everything to the side and pour the beaten eggs into the pan, scramble until cooked through.
  5. Add chilled rice to the pan, breaking up any clumps with a spatula.
  6. Stir in soy sauce, lemon zest, and lime zest, mixing well to combine all ingredients.
  7. Season with salt and pepper to taste, and cook for an additional 2-3 minutes to heat through.
  8. Remove from heat and garnish with sliced green onions before serving.
