Citrus Herb Baked Salmon with Roasted Vegetables

Ingredients:

• 4 salmon fillets
• 1 lemon, sliced
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tsp dried thyme
• 1 tsp dried rosemary
• Salt and pepper to taste
• 2 cups cherry tomatoes
• 1 red bell pepper, sliced
• 1 zucchini, sliced
• 1 red onion, sliced
• 1 tbsp balsamic vinegar
• Fresh basil leaves for garnish

Directions:

1. Preheat the oven to 400°F (200°C).
2. Place the salmon fillets on a baking sheet lined with parchment paper.
3. Drizzle olive oil over the salmon fillets and season with garlic, thyme, rosemary, salt, and pepper.
4. Top each fillet with lemon slices.
5. In a bowl, combine cherry tomatoes, bell pepper, zucchini, and red onion.
6. Drizzle with olive oil, balsamic vinegar, salt, and pepper. Toss to coat.
7. Spread the vegetable mixture around the salmon on the baking sheet.
8. Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through.
9. Garnish with fresh basil leaves before serving.
