Ingredients:

  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon hot sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 oz lump crabmeat, cooked and chopped
  • 2 tablespoons green onions, finely chopped
  • 1 tablespoon fresh parsley, minced
  • 1/2 lemon, juiced
  • Paprika, for garnish

Directions:

  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks. Place the yolks in a bowl.
  2. Mash the egg yolks with mayonnaise, Dijon mustard, hot sauce, salt, and black pepper until smooth.
  3. Fold in the chopped crabmeat, green onions, parsley, and lemon juice into the yolk mixture.
  4. Spoon or pipe the crab mixture into the hollowed egg whites.
  5. Sprinkle with paprika for garnish.
  6. Refrigerate for at least 30 minutes before serving.
