Ingredients:
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 cup pumpkin puree
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 4 oz cream cheese, softened
- 2 tablespoons powdered sugar
Directions:
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mix together pumpkin puree, melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
- In another bowl, whisk together all-purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a separate bowl, beat cream cheese with powdered sugar until smooth and creamy.
- Pour half of the pumpkin batter into the prepared loaf pan.
- Drop spoonfuls of the cream cheese mixture over the batter, then swirl gently with a knife.
- Top with the remaining pumpkin batter and smooth the top.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
