Creamy Chicken Stroganoff with Mushrooms

Ingredients:

  • 1 lb chicken breast, sliced
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley for garnish

Directions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add sliced chicken and cook until browned and cooked through.
  4. Stir in mushrooms and cook until softened.
  5. Sprinkle flour and paprika over the chicken mixture, stirring well.
  6. Pour in chicken broth and bring to a simmer, cooking until slightly thickened.
  7. Reduce heat and stir in sour cream, mixing until smooth.
  8. Cook egg noodles according to package instructions; drain.
  9. Serve the creamy chicken stroganoff over egg noodles, garnished with fresh parsley.
