Creamy Mushroom Risotto

Ingredients:

• 1 cup Arborio rice
• 4 cups vegetable broth
• 1 cup sliced mushrooms
• 1/2 cup diced onion
• 2 cloves garlic, minced
• 1/2 cup white wine
• 1/4 cup nutritional yeast
• 2 tbsp olive oil
• Salt and pepper to taste
• Fresh parsley for garnish

Directions:

1. In a large skillet, heat olive oil over medium heat.
2. Add onions and garlic, sauté until fragrant.
3. Add mushrooms and cook until they release their juices.
4. Stir in Arborio rice and cook for 1-2 minutes.
5. Deglaze the pan with white wine, stirring constantly.
6. Gradually add vegetable broth, 1 cup at a time, stirring frequently until absorbed.
7. Continue this process until the rice is creamy and cooked al dente.
8. Stir in nutritional yeast, salt, and pepper.
9. Serve hot, garnished with fresh parsley.
