Ingredients:
- 8 oz Korat rice noodles
- 2 tbsp vegetable oil
- 1/2 lb shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 eggs, beaten
- 1/4 cup soy sauce
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup bean sprouts
- 1/4 cup chopped peanuts
- 1 lime, cut into wedges
- Fresh cilantro for garnish
Directions:
- Cook the Korat rice noodles according to package instructions, then drain and set aside.
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add shrimp and garlic, stir-fry until shrimp is pink and cooked through.
- Push the shrimp to one side of the wok, pour beaten eggs into the other side.
- Scramble the eggs until cooked, then mix with the shrimp.
- Add red bell pepper, cooked noodles, soy sauce, fish sauce, and brown sugar. Stir well to combine.
- Toss in bean sprouts and half of the chopped peanuts, cook for another 2-3 minutes.
- Serve hot, garnished with remaining peanuts, lime wedges, and fresh cilantro.
