Crispy Korat Rice Noodle Pad Thai

Ingredients:

  • 8 oz Korat rice noodles
  • 2 tbsp vegetable oil
  • 1/2 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 eggs, beaten
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup bean sprouts
  • 1/4 cup chopped peanuts
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish

Directions:

  1. Cook the Korat rice noodles according to package instructions, then drain and set aside.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat.
  3. Add shrimp and garlic, stir-fry until shrimp is pink and cooked through.
  4. Push the shrimp to one side of the wok, pour beaten eggs into the other side.
  5. Scramble the eggs until cooked, then mix with the shrimp.
  6. Add red bell pepper, cooked noodles, soy sauce, fish sauce, and brown sugar. Stir well to combine.
  7. Toss in bean sprouts and half of the chopped peanuts, cook for another 2-3 minutes.
  8. Serve hot, garnished with remaining peanuts, lime wedges, and fresh cilantro.
