Ingredients:

  • 4 flathead fillets
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil

Directions:

  1. In a shallow dish, mix flour, paprika, salt, and pepper. Dredge flathead fillets in the flour mixture, shaking off excess.
  2. Heat olive oil in a large skillet over medium-high heat. Add the fillets and cook for 3-4 minutes on each side until golden and crispy.
  3. Remove the fillets from the skillet and set aside.
  4. In the same skillet, melt butter. Add garlic, parsley, dill, and lemon juice. Cook for 1-2 minutes until fragrant.
  5. Place the fried flathead fillets back into the skillet, spooning the butter sauce over the top.
  6. Serve hot and garnish with extra herbs and lemon slices.
