East Coast Diner Special Meatloaf Sandwich

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 1 small onion, finely diced
  • 1 egg
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 8 slices of white bread
  • Butter
  • 4 slices of American cheese
  • Lettuce
  • Tomato slices

Directions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine ground beef, breadcrumbs, ketchup, onion, egg, Worcestershire sauce, salt, and pepper.
  3. Mix until well combined and form into a loaf shape.
  4. Place the meatloaf on a baking sheet and bake for 40-45 minutes or until cooked through.
  5. Let the meatloaf cool slightly before slicing.
  6. Butter one side of each slice of bread.
  7. Heat a skillet over medium heat.
  8. Place the bread slices butter-side down in the skillet.
  9. Top 4 bread slices with a slice of cheese each.
  10. Add slices of meatloaf on top of the cheese.
  11. Top with lettuce, tomato slices, and the remaining bread slices.
  12. Cook until the bread is golden brown and the cheese is melted, flipping halfway through.
  13. Serve hot and enjoy!
