Ingredients:

  • 4 large eggs
  • 4 slices of thick-cut bacon
  • 2 English muffins, split
  • 1/2 cup hollandaise sauce
  • 1 tablespoon white vinegar
  • Salt and pepper to taste
  • Fresh chives for garnish

Directions:

  1. Cook the bacon in an air fryer at 400°F for 8-10 minutes until crispy.
  2. While the bacon is cooking, bring a pot of water to a simmer and add the white vinegar.
  3. Crack each egg into a small bowl and gently slide them into the simmering water, poaching for about 3-4 minutes.
  4. Toast the English muffins until golden brown.
  5. Assemble the dish by placing a slice of bacon on each half of the English muffin, topping with a poached egg, and drizzling with hollandaise sauce.
