Ingredients:
- 8 oz fettuccine pasta
- 4 slices pancetta, diced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 egg yolks
- 1/4 cup chopped parsley
- Salt and black pepper to taste
Directions:
- Cook fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a skillet, cook the pancetta until crispy. Remove from the pan and set aside.
- In the same skillet, combine the heavy cream, Parmesan cheese, and egg yolks. Cook over low heat, stirring constantly until the sauce thickens.
- Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add some of the reserved pasta water.
- Stir in the cooked pancetta and chopped parsley. Season with salt and pepper to taste.
