Ingredients:

  • 8 oz fettuccine pasta
  • 4 slices pancetta, diced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 egg yolks
  • 1/4 cup chopped parsley
  • Salt and black pepper to taste

Directions:

  1. Cook fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet, cook the pancetta until crispy. Remove from the pan and set aside.
  3. In the same skillet, combine the heavy cream, Parmesan cheese, and egg yolks. Cook over low heat, stirring constantly until the sauce thickens.
  4. Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add some of the reserved pasta water.
  5. Stir in the cooked pancetta and chopped parsley. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra Parmesan and parsley.
