Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1/2 cup fresh blueberries

Directions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the buttermilk, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are okay.
  4. Gently fold in the fresh blueberries.
  5. Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface of the pancakes, then flip and cook for another 1-2 minutes until golden brown.
  8. Repeat with the remaining batter.
  9. Serve warm with maple syrup and extra blueberries on top.
