Ingredients:
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1/2 cup fresh blueberries
Directions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the buttermilk, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are okay.
- Gently fold in the fresh blueberries.
- Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface of the pancakes, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
