Ingredients:

  • 2 cups pumpkin puree
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 tsp vanilla extract

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, whisk together the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely in the pan on a wire rack before frosting.
  8. For the frosting, beat together 8 oz cream cheese, ½ cup unsalted butter, 2 cups powdered sugar, and 1 tsp cinnamon until creamy.
  9. Spread the cinnamon cream cheese frosting evenly over the cooled pumpkin cake.
  10. Slice and serve, garnishing with a sprinkle of cinnamon if desired.
