Herb-Crusted Baked Fish Sandwich

Ingredients:

  • 4 tilapia fillets
  • 1/2 cup whole wheat breadcrumbs
  • 1 tbsp chopped fresh parsley
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 whole wheat sandwich buns
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 tsp Dijon mustard

Directions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine breadcrumbs, parsley, garlic powder, paprika, salt, and pepper.
  3. Dip each tilapia fillet in the breadcrumb mixture, ensuring it's coated evenly on both sides.
  4. Place the coated fillets on the prepared baking sheet and bake for 15-20 minutes, or until the fish is cooked through and the coating is crispy.
  5. In a small bowl, mix Greek yogurt, lemon juice, and Dijon mustard to make the dressing.
  6. Toast the sandwich buns in the oven for a few minutes.
