Ingredients:
- 4 tilapia fillets
- 1/2 cup whole wheat breadcrumbs
- 1 tbsp chopped fresh parsley
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 whole wheat sandwich buns
- 1 cup shredded lettuce
- 1 large tomato, sliced
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
Directions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine breadcrumbs, parsley, garlic powder, paprika, salt, and pepper.
- Dip each tilapia fillet in the breadcrumb mixture, ensuring it's coated evenly on both sides.
- Place the coated fillets on the prepared baking sheet and bake for 15-20 minutes, or until the fish is cooked through and the coating is crispy.
- In a small bowl, mix Greek yogurt, lemon juice, and Dijon mustard to make the dressing.
- Toast the sandwich buns in the oven for a few minutes.
