Kimchi Fried Rice with Bacon

A savory and satisfying fried rice dish combining the tangy spice of kimchi with crispy bacon and fluffy scrambled eggs for a perfect meal any time of day.

Ingredients:
- 4 slices bacon, chopped
- 1 cup kimchi, chopped
- 3 cups cooked jasmine rice, preferably day-old
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs
- 2 green onions, sliced
- 1 teaspoon toasted sesame seeds
- Salt and black pepper to taste
Directions:
- Heat a large skillet over medium heat and add chopped bacon. Cook for 5-7 minutes until crispy, then remove bacon and set aside, leaving bacon fat in the pan.
- Add diced onion to the skillet and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Add chopped kimchi and stir-fry for 3 minutes until slightly caramelized.
- Increase heat to medium-high and add cooked rice to the skillet. Break up clumps and stir-fry with kimchi mixture for 4-5 minutes until heated through.
- Stir in soy sauce and sesame oil, mixing well to evenly coat the rice.
- Push rice mixture to one side of the skillet. Crack eggs into the empty side and scramble them until just set, about 2 minutes.
- Mix scrambled eggs into the rice thoroughly, then add cooked bacon back to the pan and stir to combine.
- Season with salt and black pepper to taste.
- Remove from heat and garnish with sliced green onions and toasted sesame seeds before serving.
