Ingredients:
- 2 cups shredded leftover fried chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
- Sour cream for serving
- Salsa for serving
Directions:
- Heat olive oil in a skillet over medium heat.
- Add diced bell peppers and onions; sauté until softened, about 3-4 minutes.
- In a bowl, mix shredded chicken with taco seasoning.
- Place a tortilla in the skillet, sprinkle half with cheese, add a layer of chicken mixture, sautéed veggies, and then more cheese.
- Fold the tortilla over and cook until golden brown, about 2-3 minutes per side.
- Repeat with remaining tortillas and fillings.
- Cut quesadillas into wedges and serve with sour cream and salsa.
