Ingredients:
- 1 cup basmati rice
- 1 lb chicken thighs, bone-in
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 can chickpeas, drained
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
Directions:
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, cumin, paprika, and cinnamon.
- In a large oven-safe skillet, heat olive oil over medium heat.
- Sear the chicken thighs until browned, then remove and set aside.
- Saute the onion, bell pepper, and zucchini in the same skillet until softened.
