Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 cup sugar
- 2 eggs
- 1 tbsp smooth apricot jam
- 1 tbsp vinegar
- 1 cup milk
- 1 tbsp butter
- 1/4 cup hot water
- 1/2 cup cream
- 1/2 cup sugar
- 1/2 cup butter
Directions:
- Preheat the oven to 350°F (180°C) and grease a baking dish.
- In a bowl, mix the flour and baking soda.
- In another bowl, beat the sugar and eggs until creamy.
- Add the jam, vinegar, and milk to the egg mixture.
- Melt the butter in the hot water and add to the egg mixture.
- Gradually fold the flour mixture into the wet ingredients.
- Pour the batter into the prepared baking dish and bake for 45 minutes or until a skewer comes out clean.
- While the pudding is baking, make the sauce by combining the cream, sugar, and butter in a saucepan. Heat until sugar dissolves.
- When the pudding is done, poke holes in it and pour the hot sauce over it. Let it sit for a few minutes to soak up the sauce.
- Serve warm with ice cream or custard.
