Marsala Chicken Meatballs

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup Marsala wine
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp olive oil

Directions:

  1. In a mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix well.
  2. Form the mixture into meatballs of equal size.
  3. In a skillet over medium heat, heat olive oil. Brown the meatballs on all sides, then remove from the skillet and set aside.
  4. Deglaze the skillet with Marsala wine, scraping up any browned bits from the bottom.
  5. Add chicken broth and heavy cream to the skillet. Stir well to combine.
  6. Return the meatballs to the skillet and simmer in the sauce for about 10-12 minutes until cooked through.
  7. Serve the Marsala chicken meatballs hot, garnished with extra parsley if desired.
