Ingredients:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup Marsala wine
- 1/4 cup chicken broth
- 1/4 cup heavy cream
- 2 tbsp olive oil
Directions:
- In a mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix well.
- Form the mixture into meatballs of equal size.
- In a skillet over medium heat, heat olive oil. Brown the meatballs on all sides, then remove from the skillet and set aside.
- Deglaze the skillet with Marsala wine, scraping up any browned bits from the bottom.
- Add chicken broth and heavy cream to the skillet. Stir well to combine.
- Return the meatballs to the skillet and simmer in the sauce for about 10-12 minutes until cooked through.
- Serve the Marsala chicken meatballs hot, garnished with extra parsley if desired.
