Ingredients:

  • 4 salmon fillets
  • 2 cups cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine cherry tomatoes, zucchini, bell pepper, red onion, olive oil, garlic, oregano, lemon zest, salt, and pepper. Toss to coat the vegetables evenly.
  3. Spread the vegetable mixture on a large baking sheet and create four spaces for the salmon fillets.
  4. Place the salmon fillets on the baking sheet and drizzle with lemon juice. Top each fillet with crumbled feta cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Remove from the oven and garnish with fresh parsley before serving.
