Ingredients:
- 4 salmon fillets
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, sliced
- 1/2 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine cherry tomatoes, zucchini, bell pepper, red onion, olive oil, garlic, oregano, lemon zest, salt, and pepper. Toss to coat the vegetables evenly.
- Spread the vegetable mixture on a large baking sheet and create four spaces for the salmon fillets.
- Place the salmon fillets on the baking sheet and drizzle with lemon juice. Top each fillet with crumbled feta cheese.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
