Miso Glazed Salmon & Farro Bowls

Ingredients:

  • 4 salmon fillets
  • 1/4 cup miso paste
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 cup farro
  • 2 cups water
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • Sesame seeds for garnish
  • Green onions for garnish

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix miso paste, soy sauce, honey, and minced garlic.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Brush the miso mixture over the salmon.
  4. Bake the salmon for 12-15 minutes, or until cooked through.
  5. In a saucepan, combine farro and water. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until farro is tender.
  6. Divide the cooked farro among bowls. Top with miso glazed salmon, avocado slices, and cucumber slices.
  7. Garnish with sesame seeds and chopped green onions.
