Ingredients:
- 4 salmon fillets
- 1/4 cup miso paste
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 cup farro
- 2 cups water
- 1 avocado, sliced
- 1 cucumber, sliced
- Sesame seeds for garnish
- Green onions for garnish
Directions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix miso paste, soy sauce, honey, and minced garlic.
- Place salmon fillets on a baking sheet lined with parchment paper. Brush the miso mixture over the salmon.
- Bake the salmon for 12-15 minutes, or until cooked through.
- In a saucepan, combine farro and water. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until farro is tender.
- Divide the cooked farro among bowls. Top with miso glazed salmon, avocado slices, and cucumber slices.
- Garnish with sesame seeds and chopped green onions.
