Mushroom Lentil Bolognese

Ingredients:

  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 lb whole wheat spaghetti

Directions:

  1. In a pot, combine lentils and vegetable broth. Bring to a boil, then simmer for 20 minutes until lentils are tender.
