Ingredients:
- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 cups beef broth
- Salt and pepper to taste
- 2 cups maize meal
Directions:
- In a large pot, heat vegetable oil over medium heat.
- Add the beef cubes and brown on all sides.
- Add the chopped onion and garlic, cook until softened.
- Stir in the ground coriander, cumin, paprika, and cayenne pepper.
- Pour in the beef broth and season with salt and pepper. Simmer for 1 hour until beef is tender.
- In a separate pot, bring 6 cups of water to a boil. Gradually whisk in the maize meal, stirring constantly to prevent lumps.
- Reduce heat and simmer, stirring occasionally, for 20 minutes until thickened.
