Namibian Spiced Beef with Pap

Ingredients:

  • 1 lb beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups beef broth
  • Salt and pepper to taste
  • 2 cups maize meal

Directions:

  1. In a large pot, heat vegetable oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Add the chopped onion and garlic, cook until softened.
  4. Stir in the ground coriander, cumin, paprika, and cayenne pepper.
  5. Pour in the beef broth and season with salt and pepper. Simmer for 1 hour until beef is tender.
  6. In a separate pot, bring 6 cups of water to a boil. Gradually whisk in the maize meal, stirring constantly to prevent lumps.
  7. Reduce heat and simmer, stirring occasionally, for 20 minutes until thickened.
  8. Serve the spiced beef over hot pap and enjoy!
