Ingredients:
- 4 walleye fillets (6 ounces each)
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 lemon (juiced)
- Fresh parsley (chopped, for garnish)
Directions:
- Pat the walleye fillets dry with paper towels and season both sides with salt, pepper, and paprika.
- Dredge each fillet in flour, shaking off excess flour.
- Heat olive oil in a large skillet over medium-high heat for about 2 minutes until hot.
- Add the fillets to the skillet and cook for 4-5 minutes on one side until golden brown.
- Carefully flip the fillets and add butter to the skillet. Cook for an additional 3-4 minutes until the fish is cooked through and flakes easily.
- Pour lemon juice over the fillets and let it cook for an additional minute.
- Remove from heat and garnish with fresh parsley before serving.
