Prickly Pear Panna Cotta

Ingredients:

• 2 cups prickly pear juice
• 1/2 cup sugar
• 1/4 cup water
• 1 1/2 tsp gelatin powder
• 1 cup heavy cream
• 1 tsp vanilla extract

Directions:

1. In a saucepan, combine the prickly pear juice and sugar over low heat until sugar dissolves.
2. In a separate bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
3. Add the bloomed gelatin mixture to the warm prickly pear mixture and stir until fully dissolved.
4. Remove from heat and stir in heavy cream and vanilla extract.
5. Pour the mixture into individual molds or ramekins and refrigerate for at least 4 hours or until set.
6. Once set, unmold the panna cotta onto serving plates and garnish with fresh prickly pear slices.
