Ingredients:
- 2 cups pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar

- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 cup chopped pecans
- 1/2 cup granulated sugar for streusel
Directions:
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and softened butter. Mix until well blended.
- Add eggs and vanilla extract to the mixture and stir until combined.
- In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In another bowl, mix oats, chopped pecans, and granulated sugar to create the streusel topping.
- Pour the pumpkin batter into the prepared baking dish, spreading evenly.
- Sprinkle the streusel topping over the pumpkin batter.
- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.
