Ingredients:

  • 2 cups pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup granulated sugar for streusel

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and softened butter. Mix until well blended.
  3. Add eggs and vanilla extract to the mixture and stir until combined.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In another bowl, mix oats, chopped pecans, and granulated sugar to create the streusel topping.
