Reuben Dip is a warm, cheesy, and utterly irresistible appetizer that brings all the classic flavors of a Reuben sandwich into a dippable delight. This crowd-pleasing dip features a creamy base of cream cheese and sour cream, loaded with corned beef, tangy sauerkraut, and melty Swiss cheese, all topped with a swirl of Thousand Island dressing. It's the perfect game-day snack, party appetizer, or cozy treat for any occasion.

Serving Size: 8 servings

Ingredients:

  • 1/2 small yellow onion, minced
  • 1/2 lb corned beef, chopped
  • 1 c sauerkraut, chopped
  • 1 c grated Swiss cheese
  • 8 oz cream cheese, room temperature
  • 1/2 c sour cream
  • 1 Tbls ketchup
  • 2 tsp mustard (dijon or spicy brown)
  • cocktail rye bread (or pita chips, crackers or toasted baguette slices), for serving

Directions:

  1. Preheat oven to 375F. Spray a baking dish with non-stick cooking spray.
  2. Mix all of the ingredients together in a bowl.
  3. Spoon mixture into prepared baking dish.
  4. Cover with foil and bake for 30 minutes.
  5. Remove foil and bake for another 10-15 minutes, until bubbly.
  6. Serve with rye bread or crackers.
