Savory Mushroom and Leek Soup

Ingredients:

• 2 tbsp olive oil
• 2 leeks, sliced
• 3 cloves garlic, minced
• 8 oz cremini mushrooms, sliced
• 6 cups vegetable broth
• 1 cup heavy cream
• 1 tsp thyme
• Salt and pepper to taste
• Fresh parsley for garnish

Directions:

1. In a large pot, heat the olive oil over medium heat.
2. Add the leeks and garlic, sauté until softened, about 5 minutes.
3. Add the mushrooms and cook until they release their juices and start to brown.
4. Pour in the vegetable broth and bring to a simmer. Let it cook for 15 minutes.
5. Stir in the heavy cream and thyme. Season with salt and pepper.
6. Simmer for an additional 5 minutes.
7. Taste and adjust seasoning if needed.
8. Serve hot, garnished with fresh parsley.
