Ingredients:

  • 2 tbsp olive oil
  • 2 leeks, sliced
  • 3 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 6 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the leeks and garlic, sauté until softened, about 5 minutes.
