Savory Pork Chops with Tomato Gravy

Ingredients:

• 4 bone-in pork chops
• 1/2 cup all-purpose flour
• 1 tsp smoked paprika
• 1/2 tsp garlic powder
• Salt and pepper to taste
• 2 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 can (14 oz) crushed tomatoes
• 1 cup chicken broth
• 1/2 tsp dried thyme
• 1/2 tsp dried oregano
• Fresh parsley for garnish

Directions:

1. In a shallow dish, combine flour, smoked paprika, garlic powder, salt, and pepper.
2. Dredge the pork chops in the seasoned flour mixture, shaking off any excess.
3. In a large skillet, heat olive oil over medium-high heat.
4. Brown the pork chops on both sides, then transfer to a plate and set aside.
5. In the same skillet, sauté onions and garlic until softened.
6. Stir in crushed tomatoes, chicken broth, thyme, and oregano. Bring to a simmer.
7. Return the pork chops to the skillet, cover, and cook for 20-25 minutes until the pork is cooked through.
8. Serve the pork chops with tomato gravy over them, garnished with fresh parsley.
