Ingredients:
- 1 cup basmati rice
- 1 lb white fish fillets
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 1/2 cup chopped parsley
- 1/4 cup pine nuts
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- Salt and pepper to taste
- 4 cups fish or vegetable broth
- 1/4 cup olive oil
Directions:
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- Season the fish fillets with salt, pepper, cumin, and coriander.
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and garlic, sauté until fragrant.
- Add the diced tomatoes, turmeric, and pine nuts. Cook for a few minutes until the tomatoes start to soften.
- Pour in the rice and stir well to coat the grains with the tomato mixture.
- Place the seasoned fish fillets on top of the rice.
- Pour in the broth, cover, and let it simmer until the rice is cooked and the fish is flaky, about 20 minutes.
