Ingredients:

  • 1 cup fish scales, cleaned and dried
  • 4 cups water
  • 2 cups sugar
  • 1/4 cup lime juice
  • 1 packet agar-agar powder
  • Blue food coloring (optional)
  • Edible pearls for garnish

Directions:

  1. In a saucepan, combine the fish scales and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
  2. Strain the fish scale-infused water into a clean saucepan, discarding the scales.
  3. Add sugar, lime juice, and agar-agar powder to the saucepan. Stir well to combine.
  4. Bring the mixture to a boil, stirring constantly until the sugar and agar-agar have dissolved.
  5. If desired, add a few drops of blue food coloring to achieve a seafoam hue.
  6. Pour the jelly mixture into individual molds or a large dish. Let it cool to room temperature, then refrigerate for at least 2 hours to set.
  7. Once set, unmold the jelly and garnish with edible pearls before serving.
