Soy-Glazed Tofu and Pork Stir-Fry

Ingredients:

  • 1 block firm tofu, cubed
  • 1/2 lb pork loin, thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 2 green onions, sliced
  • Cooked rice, for serving

Directions:

  1. In a bowl, combine soy sauce, oyster sauce, rice vinegar, and brown sugar. Set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add garlic and ginger, cook until fragrant.
  3. Add pork slices and cook until browned.
  4. Push pork to the side of the pan and add tofu. Cook until tofu is golden.
  5. Pour in the sauce mixture and stir to coat tofu and pork.
  6. Add bell pepper and snow peas, cook until vegetables are tender-crisp.
  7. Serve stir-fry over cooked rice, garnish with green onions.
