Spiced Kabsa with Roasted Almonds

Ingredients:

  • 2 cups basmati rice
  • 1 lb chicken thighs, bone-in
  • 1 large onion, chopped
  • 2 tomatoes, diced
  • 1/2 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • Salt and pepper to taste

Directions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the chicken thighs and brown on all sides.
  4. Stir in the spices (cumin, coriander, cinnamon, cloves), salt, and pepper.
  5. Add the diced tomatoes, raisins, and basmati rice. Stir to combine.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
  8. In a separate pan, toast the slivered almonds until golden brown.
  9. Serve the spiced kabsa hot, topped with roasted almonds.
