Spicy Beef Enchiladas with Red Sauce

Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 can (14 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 small flour tortillas
  • Fresh cilantro, for garnish

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add diced onions and garlic, cook until onions are translucent.
  3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for another 2 minutes.
  4. Pour half of the enchilada sauce into the beef mixture and simmer for 5 minutes.
  5. Spread a spoonful of the beef mixture onto each tortilla, roll up, and place seam side down in a baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheddar cheese.
  7. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.
