Ingredients:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1 can (14 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 8 small flour tortillas
- Fresh cilantro, for garnish
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Add diced onions and garlic, cook until onions are translucent.
- Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for another 2 minutes.
- Pour half of the enchilada sauce into the beef mixture and simmer for 5 minutes.
- Spread a spoonful of the beef mixture onto each tortilla, roll up, and place seam side down in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheddar cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
