Spicy Chicken Pozole

Ingredients:
- 2 cups hominy, drained
- 1 lb chicken thighs, boneless and skinless
- 4 cups chicken broth
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 jalapeños, diced
- 1 tsp cumin
- 1 tsp oregano
- Salt to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish
- Lime wedges for serving
Directions:
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5 minutes until translucent.
- Add minced garlic and diced jalapeños, sauté for an additional 2-3 minutes until fragrant.
- Add chicken thighs, cumin, oregano, and salt. Stir to coat the chicken in spices.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes until chicken is cooked through.
- Remove chicken from the pot, shred it with two forks, and return to the pot along with drained hominy.
- Simmer for another 10 minutes to heat the hominy through.
- Serve hot, garnished with fresh cilantro and lime wedges.
