Spicy Szechuan Braised Pork Belly

Ingredients:

  • 1 lb pork belly, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp Szechuan peppercorns
  • 2 dried red chilies
  • 2 cups chicken broth
  • 2 green onions, chopped
  • 1 tbsp vegetable oil

Directions:

  1. In a large pot, heat vegetable oil over medium heat.
  2. Add garlic, ginger, Szechuan peppercorns, and dried red chilies. Stir fry for 1-2 minutes until fragrant.
  3. Add pork belly pieces and sear until browned on all sides.
  4. Pour in soy sauce, dark soy sauce, rice vinegar, and sugar. Stir to coat the pork.
  5. Add chicken broth, cover, and simmer on low heat for 1.5 hours until pork is tender.
  6. Uncover and reduce the sauce until thickened.
  7. Garnish with chopped green onions before serving.
  8. Serve hot over steamed rice.
